Vegetarian Tacos

Follow this link to a really great Vegetarian Taco recipe. If you want to. They taste good and are cheap to make. Plus, if you're worried about protein, substitute black or kidney beans for the garbanzo beans and add rice. One of my annoyances with vegetarian recipes is that sometimes they call for expensive ingredients and are not at all economical to make (which is one main reason why I would be cooking vegetarian), or they just call for a bunch of cheese, upping the saturated fat content and making them not as healthy as you think (the other main reason I would cook vegetarian). But this one's good.

I also use dried beans instead of canned beans. If I'm running out of time, I do a quick soak, which I just read about a little bit ago. I take my beans (I think you're supposed to do it about 3+ hours before you want them done, but I don't really know) and cook them for 10 minutes at a pretty good boil. Turn them off and just let them sit on the stove until you're ready to cook. It seems lik after you quick soak they take about an hour and a half to cook, but I'm not really sure. I guess I shouldn't be sharing hot cooking tips if I don't really know the particulars. Oh, well. Go google "quick soak beans".

PS: The other day we were in the store and a woman had a newborn baby, and was just leisurely looking at random things while her baby cried. I'll never get that, by the way. Don't they get agitated listening to their child wail? Anyways, the baby was screaming for 10 minutes, no joke. Ian finally noticed the newborn wobbly wail and said, "Hey, mom, is that a monkey?"

One of my old roommate fancies herself a vegetarian. I don't know much about vegetarianism nor been interested in it (for the same reasons you stated in your post), but she recently started a blog of recipes. http://theeasyvegetarian.com/

Great recipe. I've never tried celery in my tacos. We do mostly vegetarian at home. I have two good recipes on my blog from a week or two ago.

I don't get the crying baby thing ever . . . I'm not saying babies don't cry, they do. But just to ignore it - that's weird.
